Gold Medal™ Sopapillas

Make this sweet southwestern fried bread with a buttermilk biscuit mix.

Water, cold approx. 50°F

Granulated sugar

  1. Mix water and biscuit in a large mixing bowl using a rubber spatula until a soft dough is formed, approx. 30 strokes. Do Not Overmix.
  2. Portion dough using a #20 scoop onto a lightly floured work surface.
  3. Roll into discs approx. 6-inch diameter and 1/8-inch thick; cut into 4 triangles.
  4. Fry in oil preheated to 350°F for 2-4 minutes until golden brown and cooked through; turning once if necessary.
  5. Drain on wire rack; dredge in granulated sugar while still warm and serve immediately.
