Gluten-Free Shepherd’s Pie

A comfort food classic -- ground beef, veggies and mashed potatoes -- goes gluten-free.

Mashed Potato Topping

Margarine

Salt-free seasoning, gluten-free

Filling
  1. Brown ground beef in 5 gallon stock pot over medium heat; strain and discard fat.
  2. Return beef to stock pot and add all vegetables and seasonings; sweat for 10 minutes over low heat.
  3. Pour in water and Honey Nut Cheerios mixture; simmer over low heat for 45 minutes, stirring occasionally.
  4. Remove from heat and reserve filling until needed.
Topping
  1. Boil potatoes in 5 gallon stock pot with 2 gallons water for 25 minutes, or until tender.
  2. Drain potatoes thoroughly, transfer to bowl of mixer fitted with paddle attachment.
  3. Add butter, yogurt, and seasonings and mix on low speed for 45 seconds.
  4. Scrape bowl; mix for an additional 30 seconds. DO NOT OVERMIX.
Assembly
  1. Distribute filling evenly into two, lightly greased, 2-inch deep hotel pans.
  2. Add mashed potato mixture to piping bag fitted with large star tip; pipe rosettes equally over both pans, covering the filling completely.
  3. Cover with aluminum foil and bake; remove foil for last 10 minutes.
  4. Allow to cool slightly and serve in 4 oz portions.
