Gluten-Free Rhubarb Flan

  1. Add milk, cream and seeds of 2 vanilla beans to a saucepan; bring to a boil.
  2. In a large mixing bowl, whisk eggs, egg yolks, sugar and rhubarb until mixture begins to thicken and is fully combined.
  3. Pour hot milk mixture slowly into egg mixture, whisking vigorously to prevent eggs from scrambling.
  4. Fold yogurt into the milk and egg mixture until just combined.
  5. Deposit 3 oz flan batter using a #12 scoop into each of 40, 5 oz oven-safe baking ramekins.
  6. Place filled ramekins into a hotel pan filled with 1-inch of water, allowing for 1-inch space between ramekins.
  7. Bake as directed below; let cool 30 minutes before serving.
