Kick the gelatin parfait up a notch with an updated version: Coconut-almond-cranberry crunch tops the groovy Yoplait® yogurt.

Fruit cocktail, canned in juice, drained

Very Berry Crunch
  1. Mix cereal, almonds, coconut and cranberries in large mixing bowl; set aside.
  2. Mix sweetened condensed milk and strawberry gelatin in small mixing bowl until smooth.
  3. Drizzle sweetened condensed milk mixture over cereal mixture; stir gently using rubber spatula to evenly coat.
  4. Spread mixture in a single layer on parchment-lined and greased full sheet pan.
  5. Bake as directed below; cool completely and store in airtight container.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Assembly
  1. Place 1/2 cup of gelatin cubes into each of 32 serving bowls or cups.
  2. Pipe 4 oz yogurt on top of gelatin layer.
  3. Place 1/4 cup fruit cocktail on top of yogurt layers.
  4. Divide Very Berry Crunch evenly across the top of the parfaits; serve chilled.

  • Serve topped with Rice Chex in place of Very Berry Crunch and add a drizzle of raspberry dessert sauce if desired. Note nutrition information may change.
