Gluten-Free Quinoa Chocolate Cherry Energy Bars

Cashews, figs, cherries and chocolate star in a snack bar that's gluten-free and fabulous!

Gluten-free quick oats, dry

Quinoa, cooked, cooled

Almond meal

Sea salt, coarsely ground
3/4 tsp
Dried cherries, chopped

Cocoa nibs, raw

  1. Add cashews and flax seeds to food processor; grind to a paste.
  2. Scrape bowl; add figs and process until mixture is even and begins to form a ball.
  3. Scrape bowl; add cacao butter, coconut milk and vanilla and process until smooth.
  4. Transfer mixture to mixer bowl fitted with paddle attachment; add oats, quinoa, almond meal, sea salt, cherries and cocoa nibs.
  5. Mix on low speed until ingredients are evenly distributed; deposit onto parchment-lined half sheet pan.
  6. Use pan spray and gloved hands to press evenly into pan; refrigerate for 1 hour before cutting.
  7. Serve at room temperature for up to 8 hours (will soften with higher temperature); cover and refrigerate or freeze for extended storage.

  • Coconut butter can be substituted if cacao butter is not available. Lightly sweetened cocoa nibs can be substituted for raw nibs; note the nutrition information will change with substitutions.
