Crispy Dill Coating

Dill, fresh, chopped

Marinade
  1. Mix yogurt, pickle juice, dill and spices in mixing bowl; whisk until combined.
  2. Divide chicken evenly between 2 full steam table pans; divide yogurt mixture evenly (approx. 4 cups per pan).
  3. Stir to coat, cover with plastic wrap and chill 8-24 hours.
Coating
  1. Pulse Rice Chex in food processor until crushed.
  2. Transfer to full sheet pan, add chopped dill and stir to mix.
  3. Place chicken breasts on coating mix; discard remaining marinade.
  4. Roll chicken in mixture to coat evenly.
  5. Place on greased and parchment-lined sheet pan in 4x6 pattern; bake and serve hot.
