Gluten-Free Cornish Game Hen Pie

A dreamy filling of tender veggies and game hen is baked in a flaky crust -- gluten-free chicken pot pie!

Filling
  1. Melt butter in large sauce pan; add onion, celery, carrots, garlic, salt, pepper and thyme.
  2. Stir to combine and cook over medium heat approx. 4 minutes or until vegetables are tender.
  3. Add Cornish game hen and cream to the vegetable mixture; stir to combine.
  4. Add cornstarch and water to a small bowl; mix until smooth and completely combined.
  5. Add cornstarch mixture to vegetable-meat mixture.
  6. Cook over low heat for 3 minutes or until mixture has thickened slightly; remove from heat.
  7. Fold yogurt into vegetable-meat mixture until combined.
  8. Refrigerate mixture for at least 1 hour before assembling pies.
Assembly
  1. Divide dough into 8 - 7.5 oz balls; roll each into an 8-inch disc.
  2. Place one disc into the bottom and up the sides of each of 4 - 8-inch pie pans.
  3. Place approx. 1 lb 12 oz of cooled filling in each pan; spread out evenly.
  4. Top with another 8-inch disc; pinch edges together or crimp with a fork.
  5. Cover the outside edge of the pie crust with foil for the first half of baking to prevent over-browning.
