Gluten-Free Coconut Shrimp

Moist and flavorful coconut shrimp  gets a gluten-free and seriously crunchy make-over from Chex™ cereal.

Batter
  1. Place cereal in bowl of food processor; grind approx. 30 seconds or until finely ground.
  2. Place coconut milk, eggs and Rice Chex to mixing bowl. Whisk until combined.
Coating
  1. Place coconut, cereal and corn starch in bowl of a food processor; grind for 30 seconds.
  2. Place mixture in separate bowl.
Assembly
  1. Hold shrimp by tail; dip in batter allowing excess batter to drip off and immediately dip coat in coconut.
  2. Place coated shrimp on parchment-lined sheet pan; chill for at least 30 minutes.
  3. Place small batches of coconut shrimp into the oil of a deep fryer preheated to 350°F; fry until golden brown.
  4. Place fried shrimp on cooling rack, allowing excess oil to drip off; serve immediately.
