Ginger Beer Cakes with Brown Butter Glaze

Ginger beer gives mini bundt spice cakes a fabulous flavor, and it only gets better with brown butter icing.

*Ginger beer is a non-alcoholic beverage that is strongly flavored with fermented ginger and is carbonated.
Batter
  1. Place half of the ginger beer in mixer bowl fitted with paddle attachment.
  2. Add eggs, molasses and cake mix to bowl; mix on medium speed 2 minutes.
  3. Pour remaining ginger beer slowly into mixing bowl while mixing on low speed to combine.
  4. Stop mixer, scrape bowl, and mix 2 minutes longer on low speed.
  5. Scoop batter using #10 scoop into well greased mini Bundt cake pans.
  6. Bake as directed below and Immediately remove pans to allow to cool and prevent sticking.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Brown Butter Glaze
  1. Heat butter in heavy saucepan over medium heat.
  2. Stir or swirl butter constantly in pan to keep butter from burning. Watch carefully, as butter can burn quickly.
  3. Remove pan from heat when butter turns brown and has a nutty aroma, approx. 5 minutes. Allow to cool.
  4. Heat icing in microwave until melted. Fold butter into icing.
  5. Dip top quarter of cooled Bundt cakes into glaze.
  6. Turn upside down on cake screen to allow icing to drip down sides; allow glaze to set before serving.
