Cappuccino muffin batter with chocolate chunks gets a flavor boost from instant espresso coffee.

Instant espresso powder

  1. Dissolve instant espresso in hot water; allow to cool slightly.
  2. Add muffin batter to mixing bowl and pour in espresso liquid; mix well.
  3. Deposit #16 scoop of batter into greased or paper-lined muffin pans.
  4. Bake as directed below and allow to cool slightly before serving.
