Fruit Strip Bar Cake

Fresh raspberries and blackberries adorn the top of a gorgeous bar cake, with two layers and luscious Bavarian cream in between.

Batter
  1. Prepare cake mix according to package directions.
  2. Deposit batter into greased and parchment-paper lined full sheet pan.
  3. Bake as directed below and allow to cool; cut into 12 - 4 x 8-inch sections.

*Rotate pans baked in convection oven one-half turn (180°) after 13 minutes of baking.
Finishing
  1. Slice each section in half horizontally.
  2. Spread 6 oz Bavarian cream evenly over bottom layer; replace the top layer.
  3. Frost the entire cake section with 4.25 oz of whipped topping; pipe a border (using shell tube #22) of 1 oz around the top edge.
  4. Place 6 oz blackberries and 4 oz raspberries on top; brush fruit with 1 Tbsp warm apricot glaze.
  5. Garnish sides of each with 0.5 oz chocolate shavings (using a vegetable peeler).
