Fried Tomatoes

Fried tomatoes -- crisp on the outside, moist on the inside -- are a classic Southern comfort food. Serving them with Sweet Jalapeño Yogurt (with Yoplait® Nonfat Plain Yogurt) only makes them better!

Servings: 4 servings (1 serving = 3 slices)
Sweet Jalapeño Yogurt

Pickled jalapeño, chopped

Honey

Kosher salt

Garlic, fresh, chopped
1/4 tsp
Lemon juice
1/4 tsp
Tomatoes

Tomatoes, firm, fresh

Eggs, large
4 oz
2 each
Water, cool approx. 72°F
2 Tbsp
Yellow cornmeal
3 oz
1/2 cup
Cumin, ground
2 tsp
Kosher salt
2 tsp
Sweet Jalapeño Yogurt
  1. Combine yogurt, pickled jalapeño, honey, salt, garlic and lemon juice in small bowl.
  2. Stir until well mixed; keep cold until serving.
Tomatoes
  1. Slice off ends of tomatoes and discard; cut into 4 slices, 1/2-inch thick.
  2. Whisk eggs and water together in small mixing bowl.
  3. Add bread crumbs, corn meal, cumin and salt into separate bowl; mix well.
  4. Dredge tomatoes in bread crumb mixture, then egg mixture, and back to bread crumb mixture.
  5. Deep fry tomatoes until golden but still firm, about 1 minute.
  6. Serve 3 slices with 1 Tbsp Sweet Jalapeño Yogurt.
