Fish
  1. Coat catfish in flour, shaking off excess; dip in egg, shaking off excess.
  2. Coat fully in crushed Cheetos and place on parchment-lined sheet pan.
  3. Bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
Waffles
  1. Add water, eggs, oil and muffin mix to large mixing bowl; whisk together until smooth.
  2. Fold in green onions until combined.
  3. Deposit batter using a #8 scoop (approx. 4.75 oz) onto a well-oiled waffle iron preheated to approx. 375°F.
  4. Bake 3 minutes or until golden brown.
Assembly
  1. Cut 1 waffle into quarters and place on plate; add 2 pieces of Fish.
  2. Add 1 oz (#30 scoop) coleslaw; serve with 1 Tbsp (0.5 oz) maple syrup on the side and serve immediately.
