Fig Gorgonzola Biscuits

Gorgonzola cheese, crumbled

Mission figs, dried, stems removed
1 lb 6.00 oz
4 1/2 cups
Water, cold approx. 50°F

Onion salt

  1. Place gorgonzola cheese and figs into food processor and blend for approx. 20 seconds or until thoroughly mixed.
  2. Pour total amount of water into mixer bowl and then add total amount of mix; mix using a paddle attachment on low speed for 15 seconds or until liquid is incorporated.
  3. Stop mixer, scrape bowl and paddle; add cheese and fig mixture to mixer bowl and mix on low speed for 15 seconds. Do not Overmix.
  4. Deposit dough onto parchment-lined sheet using a #20 scoop in a 4 x 6 pattern.
  5. Press down gently with fingertips on each biscuit; top each with a pinch of onion salt (biscuits are darker in appearance than many traditional versions).
  6. Bake as directed below.
