Fiesta French Toast

Skip the maple syrup and pass the salsa! The bread batter for this savory breakfast is packed with veggies, then baked -- and sliced to make an out-of-this world twist on French toast.

Cayenne pepper, ground

Bread
  1. Pour total amount of water and muffin mix into mixer bowl fitted with paddle attachment; mix on low speed for 30 seconds.
  2. Stop mixer, scrape down bowl and paddle; add in seasoning, onions, tomatoes, peppers and cheese.
  3. Mix for an additional 30 seconds until well incorporated.
  4. Deposit 3 - #6 scoops (1 lb 2 oz) of batter into 8 different 8 x 4 x 2 1/2-inch greased loaf pans.
  5. Smooth batter in each loaf pan with an offset spatula.
  6. Bake as directed below; remove baked loaves from pans and allow to cool for at least 4 hours..

*Rotate pans baked in convection oven one-half turn (180°) after 16 minutes of baking.
Finishing
  1. Place eggs, milk, garlic salt, cayenne pepper and cumin in a medium mixing bowl; beat with a wire whisk until fully combined.
  2. Cut each loaf of bread into 1/2-inch slices; arrange pieces on sheet pans.
  3. Brush tops of each piece with egg mixture; place egg side down on a griddle preheated to 350°F.
  4. Cook 2-3 minutes until golden brown; brush tops on the griddle with the egg mixture before flipping, then cook another 2-3 minutes until golden brown.

  • Tip: Instead of syrup, serve with sour cream and salsa.
