Espresso Brownie Dessert Pops

Cake pops start with brownies that are baked with espresso, then formed into amazing brownie lollipops dipped in vanilla icing and drizzled with chocolate.

Batter
  1. Mix brownies according to package directions, substituting hot espresso for the water.
  2. Deposit batter in greased or paper-lined full sheet pans; bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
Assembly
  1. Add full sheet pan of completely cooled brownies to the mixer bowl and blend on medium speed for 1 minute.
  2. Deposit brownie mixture, using a #40 scoop onto a parchment-lined full sheet pan.
  3. Insert a lollipop stick into each portion and freeze until firm, approx. 1-2 hours or overnight.
Finishing
  1. Mix espresso powder and hot water together to make a paste. Set aside.
  2. Heat vanilla icing in microwave until melted. Do not overheat.
  3. Combine vanilla icing and espresso paste; stir until well combined.
  4. Dip each cake pop into vanilla/espresso icing; rolling to coat well and allow excess icing to drip off.
  5. Insert brownie pops, standing upright, into Styrofoam board to allow icing to set.
  6. Heat chocolate icing in microwave until melted. Do not overheat; drizzle on top to finish.
