Dutch Crunch Croissants

Dutch Crunch, also called Tiger Bread, adds a satisfying crispiness to Pillsbury™ Freezer-to-Oven Butter Croissant Dough - enjoyable on its own or with sweet or savory fillings.

Prep
  1. Thaw croissants covered, either at room temperature 30 minutes or refrigerated overnight.
Assembly
  1. Add rice flour to a medium sized bowl.
  2. Stir each ingredient into the bowl, one ingredient at a time, thoroughly combined before adding the next ingredient: instant yeast, sugar, salt, vegetable oil and water.
  3. Mix until a paste is formed; set aside for 10 minutes.
  4. Pour 1 Tbsp mixture over top of croissant dough, spreading evenly over top.
  5. Proof 15-30 minutes, covered, until small bubbles form on the paste.
  6. Bake as directed until golden brown and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.

  • Swap the vegetable oil for an infused oil, like sesame or rosemary oil, for an added flavor boost. Be sure to strain out any solids in the oil so they don’t burn when baking.

  • Fill with pastry cream and fruit for a sweet option or stuff with eggs, breakfast meats and cheese for a savory breakfast sandwich.
