Dutch Apple Coffee Cake

Chopped apples, canned, drained

Streusel Topping
  1. Combine ingredients in large mixing bowl; stir until butter is fully incorporated.
  2. Set aside, or refrigerate until needed.
Batter
  1. Add water and muffin mix to large mixing bowl; mix using wire whisk or rubber spatula until batter is smooth.
  2. Fold in apples and lemon extract; spread batter evenly into greased or sprayed full sheet pan.
  3. Sprinkle Streusel Topping over batter, and bake as directed below.

  • Add 1 Tbsp vanilla extract, 1 Tbsp cinnamon and 1 tsp nutmeg to batter for additional flavor variety if desired.
