Double Trouble Brownie Delights

Like a cross between a doughnut hole and a truffle, moist brownie crumbs get a batter coating and are deep fried in bite-size balls.

Batter
  1. Prepare brownie mix according to box directions.
  2. Deposit batter on greased or parchment-lined full sheet pan.
  3. Bake as directed below and allow to cool.

*Rotate pans baked in a convection oven one-half turn (180°) after 9 minutes of baking.
Assembly
  1. Prepare pancake batter according to box directions; set aside.
  2. Place cooled brownies into mixer bowl with paddle attachment and mix on low speed for 30 seconds.
  3. Deposit brownie balls using a #70 scoop onto parchment-lined full size sheet pans.
  4. Place cornstarch into medium mixing bowl and gently coat brownie balls in cornstarch and shaking off excess cornstarch.
  5. Place brownie balls into prepared pancake batter working quickly in small batches.
  6. Place small batches of coated brownie balls into a deep fryer preheated to 350°F for 45 seconds - 1 minute; turn occasionally for even browning.
  7. Allow to drain and serve immediately.
