Double Strawberry Shortcake Mini Shots

Little squares of strawberry cake are layered with vanilla pudding, topped with whipped cream.

Batter
  1. Prepare batter according to package directions, adding the strawberry flavored gelatin.
  2. Pour entire amount of batter into greased or parchment-lined half sheet pan.
  3. Bake as directed below; allow to cool and freeze for better handling.

*Rotate pans baked in convection oven one-half turn (180°) after 13 minutes of baking.
Assembly
  1. Cut frozen cake into 1/4-inch cubes.
  2. Place 0.3 oz (approx. 6 cubes) of cake cubes into bottom of 4 oz shot glass.
  3. Place or pipe 0.5 oz prepared vanilla pudding then add 0.3 oz (approx. 6 cubes) cake cubes on top.
  4. Pipe a rosette (approx. 0.25 oz) whipped topping to finish.
  5. Chill until ready to serve.
