Dill Gouda Mashed Potatoes

Potatoes are ultra creamy and flavorful after cooking in dill-scented water and mashing with Yoplait® Nonfat Plain Yogurt and Gouda cheese.

Prep
  1. Place potatoes, garlic, and pickle juice; add enough water to just cover potatoes.
  2. Heat to a boiling; reduce heat and cover.
  3. Simmer 20-30 minutes or until potatoes are tender; drain.
Finishing
  1. Add cooked potatoes, green onions, dill, salt, pepper and butter to 20 quart mixer with paddle attachment; mix on low about 1 minute.
  2. Add yogurt and Gouda cheese; mix on low 1 minute.
  3. Stop mixer, scrape bowl and paddle, mix on low an additional minute until smooth. Hold warm until served.
Serve
  1. Portion 2/3 cup (#6 scoop) onto serving dish; finish with 1 Tbsp Gouda cheese and small sprig fresh dill.

  • Tip: Substitute Cheddar or Swiss cheese for Gouda if desired.
