Dairy Free Yogurt Chilled Raspberry Soup

Thick and creamy, yet cool and fruity describes this fun dairy free yogurt chilled soup.

Thai basil, chiffonade

Soup
  1. Combine water and cranberry juice in medium sauce pan and heat to a boil.
  2. Add tapioca pearls and boil for 5 minutes (mixture will thicken).
  3. Remove from heat and cover with lid; set aside for 15 minutes.
  4. Transfer to storage container, cover and cool completely under refrigeration approx. 2 hours.
  5. Combine yogurt and chilled tapioca mixture thoroughly; cover and return to refrigerator.
Berry Puree
  1. Add raspberries, water and sugar to medium saucepan; bring to a boil.
  2. Reduce heat to low and simmer, stirring as needed, until mixture is reduced by half, approx. 5 minutes.
  3. Strain through fine sieve to remove seeds if desired.
  4. Transfer to storage container, cover and refrigerate until cooled.
Finishing
  1. Stir Soup before portioning to break up tapioca pearls.
  2. Add 1 cup chilled Soup into a serving dish and drizzle with 1 tsp cooled Berry Puree on top.
  3. Garnish with 1/4 tsp Thai basil and serve immediately.

  • Mint leaves are a good substitution for Thai basil. Use a straw, toothpick or knife to swirl the Berry Puree into Soup for enhanced presentation if desired.
