Dairy Free Blackened Shrimp with Coconut Rice and Pineapple Salsa

Add our dairy-free coconut yogurt to basmati rice to create a wonderful aromatic side to accompany blackened shrimp and pineapple salsa.

Pineapple Salsa

Coconut Rice

Blackened Shrimp
INGREDIENT

Cajun seasoning

Pineapple Salsa
  1. Add pineapple, red onion, red pepper, jalapeño, lime juice, olive oil and cilantro to a mixing bowl.
  2. Stir together and set aside until needed or cover and refrigerate.
Coconut Rice
  1. Add cooked rice, yogurt, coconut oil, lime zest and salt to a mixing bowl; stir and keep warm.
Blackened Shrimp
  1. Heat a large sauté pan on medium-high heat; add oil.
  2. Sprinkle Cajun seasoning on shrimp and add to pan; cook 2-3 minutes on each side until blackened and cooked through.
Assembly
  1. Plate 1/2 cup (3 oz) Coconut Rice, 5 each (3.5 oz) Blackened Shrimp and 1/3 cup (1.75 oz) Pineapple Salsa; serve immediately.

  • Substitute your choice of protein based on your current menu offerings. Garnish with 1 Tbsp cilantro leaves and a fresh lime wedge if desired.
