This incredibly flavorful burger uses Pillsbury™ Baked Croissants, that makes a signature item for any part of the day.

Ground chorizo, raw

Pico de gallo, prepared

Chipotle mayo, prepared

Baby arugula leaves

Guacamole, prepared

Prep
  1. Thaw baked croissants covered either at room temperature 30-45 minutes or refrigerated overnight.
  2. Split croissant in half and brush cut sides with butter; place on preheated griddle to toast.
  3. Set aside until needed.
Assembly
  1. Use #12 scoop to portion ground chorizo and place on preheated griddle.
  2. Smash with spatula until flat and cook approx. 3-4 minutes per side until cooked through.
  3. Add 1 slice of pepper jack cheese and allow to melt. 
  4. Place bottom croissant piece on serving plate and add cooked chorizo burger.
  5. Top with 1 fried egg, 1 Tbsp pico de gallo, 1 Tbsp chipotle mayo and baby arugula.
  6. Spread 1 Tbsp guacamole on cut side of top croissant piece; place on top and serve immediately.
  7. Top with 1 slice of cheese and prepared egg; add remaining bun piece and serve immediately.

  • Use parchment paper on top of ground chorizo to make flattening easier if desired.
