Glazed pork belly in a croissant with cucumbers, kimchi, cilantro and carrots is an elevated way to make your Bánh Mi extra delicious.

Prep
  1. Bake croissants as indicated on package; allow to cool for 1 hour.
  2. Slice cooled croissants in half, lengthwise.
Glazed Pork Belly
  1. Add cooked, sliced pork belly to hot skillet; cook until heated through and pieces crisp up.
  2. Spread 1/4 tsp sweet soy glaze on 1 side of each piece; keep warm.
Assembly
  1. Open croissant and toast on grill or under broiler, approx. 1 minute.
  2. Place 3 long, peeled strips of cucumbers (0.5 oz) on bottom half of croissant; season with salt and pepper.
  3. Top with 3 slices (2.5 oz) Glazed Pork Belly and 1/4 cup (2 oz) kimchi.
  4. Add 2 Tbsp (0.5 oz) carrot matchsticks and 1 Tbsp cilantro leaves; place remaining croissant piece on top.
  5. Secure with sandwich pick and serve immediately.
