Caramel Coulis
  1. Combine sugar and water in heavy large saucepan; stir over medium-low heat until sugar dissolves.
  2. Increase heat and boil without stirring 5-7 minute, occasionally brushing down sides with wet pastry brush, swirling until syrup is pale to medium amber in color.
  3. Remove from heat and stir in butter and vanilla; slowly stir in cream after butter and vanilla have been added.
Waffles
  1. Pour water, vanilla and brown sugar into large bowl; whisk until sugar begins to dissolve.
  2. Add waffle mix and mix with a wire whisk until batter is smooth.
  3. Place 4 oz of batter on a heavily greased (top and bottom), pre-heated waffle iron set at 375°-380°F.
  4. Bake 3-4 minutes or until crust is golden brown.
Finishing
  1. Just before serving the waffles add the salt to the caramel coulis (the salty-note of the caramel will build as it sits, so add no more than 30 minutes before serving).
  2. Top each waffle with 3 oz of the caramel coulis.

  • Tip: Sprinkle a small amount of sea salt over top if desired.
