Crispy Pork Biscuit Sandwiches

This crispy pork sandwich is extra delicious with a Pillsbury™ Cornbread Biscuit.

Pork loins, boneless, center cut, 4 oz

Eggs, large, well beaten

Mayonnaise

Red onions, thinly sliced

Pickle slices

Prep
  1. Bake biscuits according to package directions; keep warm.
Crispy Pork
  1. Pound pork loin to 1/4-inch thickness; season both sides with salt and pepper.
  2. Dredge each pork piece in flour and shake off excess; dip in beaten eggs, allowing excess to drip off.
  3. Dredge in bread crumbs until fully coated and shake off excess.
  4. Cook in fryer preheated to approx. 350°F for 4-5 minutes until golden brown; keep warm.
Assembly
  1. Split biscuits horizontally; spread 1/2 tsp mayonnaise on each cut side.
  2. Place Crispy Pork on bottom half of biscuit, top with 0.5 oz sliced pickles and 0.3 oz sliced red onions.
  3. Top with remaining biscuit half, serve immediately or hold warm.
