Thin, tender crepes are a snap with buttermilk pancake mix as the starter.

  1. Whisk together water and eggs in a mixing bowl until blended.
  2. Add mix and whisk until batter is blended and smooth. DO NOT OVERMIX.
  3. Deposit 1 oz (#24 scoop) of batter onto preheated crepe pan or skillet; tilt pan to swirl the batter over the surface to the edges.
  4. Cook crepe until the edges are brown and the underside is golden; flip and cook 1 minute more.
