Creamy Sweet Potato Coffee Cake

Moist and nicely spiced coffee cake is topped with both a cream cheese filling and a buttery streusel.

Cream Cheese Filling

Sweet potatoes, canned

Brown sugar, packed

Pumpkin pie spice

Water, cool approx. 72°F

Cream Cheese Filling
  1. Beat cream cheese and powdered sugar in mixer bowl with paddle attachment on medium speed 2 minutes, until light and fluffy.
  2. Stop mixer, scrape bowl and paddle. Set aside.
Streusel
  1. Mix 1 lb muffin mix, the butter and cinnamon in mixer bowl with paddle attachment on low speed 2-3 minutes or until crumbly.
  2. Stop mixer, scrape bowl and paddle. Set aside.
Batter
  1. Mix sweet potatoes, brown sugar and spice in mixer bowl with paddle attachment on medium speed 3 minutes or until combined.
  2. Stop mixer, scrape bowl and paddle. Add water and remaining 4 lb muffin mix to sweet potato mixture.
  3. Mix on low speed 1-2 minutes or until well combined.
  4. Stop mixer, scrape bowl and paddle. Mix additional 1 minute.
Assembly
  1. Spread batter in greased or parchment-lined full sheet pan.
  2. Fill pastry bag with cream cheese filling. Pipe filling in evenly spaced rows, lengthwise across pan leaving an equal amount of space between each row).
  3. Top with streusel and bake as directed below.
