Cranberry Walnut Soft Cookies

Crunchy toasted walnuts and tangy cranberries pair well in a soft and chewy, brown-sugar butter cookie made with whole grain mix.

  1. Toast chopped walnuts in 300°F convection oven 6-8 minutes or until golden brown. Set aside to cool.
  2. Beat butter and brown sugar in mixer bowl using paddle attachment on medium speed 3 minutes.
  3. Add eggs and muffin mix. Mix on low speed 30 seconds.
  4. Stop mixer, scrape bowl and paddle. Add cranberries and walnuts and mix 30 seconds on low speed.
  5. Deposit dough using #30 scoop onto lightly greased or parchment-lined sheet pan in 5 x 6 pattern.
  6. Bake as directed below.
