Country Carrot Bran Muffins

Get a nutty flavor from wheat bran and toasted walnuts mixed with carrots, raisins and nutmeg in an amazing bran muffin.

Carrots, fresh, shredded

Raisins

Coriander, ground

Nutmeg, ground

Toasted whole wheat flake cereal

Toasted Walnuts
  1. Toast walnuts on sheet pan in 350°F oven 5-7 minutes or until light golden brown.
  2. Set aside to cool.
Batter
  1. Pour 4 cups water and wheat bran into mixing bowl; allow to soak at least 5 minutes.
  2. Combine in separate bowl the remaining 4 3/4 cups water and muffin mix.
  3. Fold in soaked wheat bran, carrots, raisins, toasted walnuts and spices. DO NOT OVERMIX.
  4. Deposit #10 scoop of batter into greased or paper-lined muffin pans.
  5. Crush cereal by hand and sprinkle evenly on top; bake as directed below.
