Cornmeal Rosemary Square Biscuits

Rosemary, fresh, chopped

Black pepper, coarsely ground

  1. Add water, biscuit mix, cornmeal, rosemary and black pepper to mixing bowl; stir approx. 30 strokes or until soft dough is formed. DO NOT OVERMIX.
  2. Divide dough equally between 2 well-greased half sheet pans; spread evenly to edges and precut in a 6x8 pattern with a greased bench knife.
  3. Drizzle olive oil evenly across top of dough then bake as directed below until golden brown; cut through warm biscuits and serve.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.

  • Serve warm biscuits with cranberry mustard (1 can cranberry sauce, 1 Tbsp brown sugar and 2 Tbsp Dijon mustard), thinly sliced red onions and add sliced roast pork loin or serve with a side of Brussel sprouts slaw and fresh cut sweet potato fries.
