Cool Mint Crumble Bars

A three-layer bar has a chocolate-mint crust, a dreamy cream-cheese filling with chocolate chips and a minty crumble topping.

Liquid eggs, pasteurized

Semi-sweet chocolate chips

Crust
  1. Combine cake mix, butter, and extract in a mixer bowl with paddle attachment.
  2. Mix on low speed 1 1/2 minutes, or until crumbly texture is formed.
  3. Press half of crust mixture evenly into a greased or parchment-lined full sheet pan.
  4. Set remaining crust mixture aside.
Cream Cheese Batter
  1. Combine cream cheese and sugar in separate mixer bowl with paddle attachment.; mix on medium speed for 1 minute.
  2. Stop mixer, scrape bowl and paddle; mix an additional 1 minute.
  3. Add eggs one at a time, until each is incorporated, mixing on medium speed.
  4. Stop mixer, scrape bowl and paddle; mix additional 1 minute.
  5. Fold chips into batter, then pour over crust; crumble remaining crust mixture on top.
  6. Bake as directed below; allow to cool, keep bars covered and refrigerated.
