Creamy chocolate sandwich cookie mousse, nestled in a crisp, flaky cinnamon croissant is yummy all day.

Non-dairy whipped topping

Cream-filled chocolate sandwich cookies, crushed

Prep
  1. Place croissants on parchment-lined sheet pan, shiny side up; sprinkle evenly with cinnamon sugar.
  2. Bake croissants as indicated on package; allow to cool for 1 hour.
  3. Slice cooled croissants in half, lengthwise.
Cookies and Cream Mousse
  1. Add yogurt and whipped topping to large stainless mixing bowl; mix with wire whisk until mixture is light, airy and well-blended.
  2. Fold in crushed chocolate sandwich cookies until combined; transfer to air-tight container and refrigerate until needed.
Assembly
  1. Remove tops of croissants and add a #16 scoop of Cookies and Cream Mousse to bottom piece.
  2. Replace top piece and serve immediately.
