Coconut Macaroons

Pretty pastel coconut cookies have an aromatic almond flavor and a delightful chewy texture.

Food coloring
1/2 tsp
Imitation almond extract
1 Tbsp
Sweetened condensed milk
1 lb 12.00 oz

Shredded coconut
2 lb 4.00 oz

  1. Mix water and food coloring in mixer bowl.
  2. Add almond extract, sweetened condensed milk and cake mix.
  3. Mix on medium speed using paddle attachment 2 minutes.
  4. Fold in coconut. Mix on low speed an additional 2 minutes.
  5. Deposit using #30 scoop onto greased or paper-lined full sheet pans in 4 x 5 pattern.
  6. Bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 5 minutes of baking.
