This cookie recipe uses Gold Medal™ Cake Mix, combined with ginger, toasted coconut and lime to create something unique.

Water, cool approx. 72°F

Ginger, dried, ground
1 tsp
Crystallized ginger, small diced

Lime Icing
INGREDIENT

Powdered sugar

Lime juice

Toasted Coconut
  1. Toast coconut on parchment-lined half sheet pan at 300°F for 3-5 minutes until golden brown.
  2. Set aside to cool completely.
Batter
  1. Combine butter and sugar in mixer bowl; mix using a paddle attachment on medium speed for 2 minutes.
  2. Add eggs and water; mix on medium speed for 1 minute.
  3. Add mix and ground ginger; mix on low speed for 1 minute.
  4. Stop mixer, scrape bowl and paddle; add crystallized ginger and mix on low speed for 30 seconds.
  5. Deposit batter using #30 scoop in a 4 x 6 pattern on paper-lined full sheet pan.
  6. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Lime Icing
  1. Combine powdered sugar and lime juice in mixing bowl; mix using a wire whisk until blended.
  2. Spread approx. 1 tsp on cookie and top with a sprinkle of Toasted Coconut.
