  1. Add water, eggs, coconut milk and curry paste to large mixing bowl; mix with whisk until blended.
  2. Add pancake mix and salt and whisk until batter is blended and smooth. DO NOT OVERMIX.
  3. Preheat crepe pan (or nonstick skillet) over medium high heat; spray with pan spray and deposit 1.25 oz batter.
  4. Tilt pan and swirl batter to the edges. Cook until edges are brown and underside is golden; flip and cook approx. 1 additional minute. Serve warm.

  • Tip: Fill crepes with your choice of fresh vegetables and herbs if desired.
