Classic Diner Breakfast Biscuit Hand Pies

Cream cheese, softened

1% milk

Cheddar cheese, shredded

Filling
  1. Heat large sauté pan over medium-high heat; add oil, onions and peppers and cook 2-3 minutes and chill until ready to use.
  2. Cook, crumble and drain sausage; scramble with liquid eggs.
  3. Season with salt and combine with cooled onions and peppers; chill to below 40°F.
  4. Combine cream cheese and milk in large bowl; add chilled sausage/vegetable mixture and stir until well mixed.
  5. Mix in cheese and refrigerate until needed.
Assembly
  1. Thaw biscuits, covered, at room temp for 30 minutes or overnight in refrigerator. Roll biscuit pucks on floured surface to 7-inch circles.
  2. Place approx. 3 oz filling mixture into center of biscuit circle.
  3. Brush edges with water and fold over to seal; crimp edges with fork.
  4. Place on parchment-lined baking sheet; bake and serve warm.
