Classic Diner Breakfast Biscuit Hand Pies

Olive oil

Green bell peppers, fresh, chopped

Pork breakfast sausage, raw

Liquid eggs, pasteurized

Kosher salt
1 tsp
Cream cheese, softened

3/4 cup
1% milk
3 Tbsp
Cheddar cheese, shredded

Prep
  1. Thaw biscuits, covered, at room temp for 30 minutes or overnight in refrigerator.
Filling
  1. Heat large sauté pan over medium-high heat; add oil, onions and peppers and cook 2-3 minutes and chill until ready to use.
  2. Cook, crumble and drain sausage; scramble with liquid eggs.
  3. Season with salt and combine with cooled onions and peppers; chill to below 40°F.
  4. Combine cream cheese and milk in large bowl; add chilled sausage/vegetable mixture and stir until well mixed.
  5. Mix in cheese and refrigerate until needed.
Assembly
  1. Roll biscuit pucks on floured surface to 7-inch circles; place approx. 3 oz filling mixture into center of biscuit circle.
  2. Brush edges with water and fold over to seal; crimp edges with fork.
  3. Place on parchment-lined baking sheet; bake and serve warm.
