Prep
  1. Add icing and cream cheese to mixer bowl fitted with paddle attachment.
  2. Mix on medium speed, approx. 2 minutes until smooth, stirring as needed; place in piping bag.
  3. Combine sugar and cinnamon in a small bowl; set aside.
Batter
  1. Pulse Cinnamon Toast Crunch cereal in food processor 4-5 times until chopped small; reserve 3.5 oz for topping.
  2. Stir together water and muffin mix in large mixing bowl until thoroughly combined.
  3. Fold in 3 cups of diced apples and 5 oz Cinnamon Toast Crunch crumbs until incorporated. DO NOT OVERMIX.
  4. Deposit batter using #10 scoop into paper-lined standard muffin cups.
  5. Pipe 2 Tbsp cream cheese and icing mixture onto center of batter.
  6. Top each muffin with approx. 1 tsp cinnamon and sugar mixture, 2 tsp remaining Cinnamon Toast Crunch cereal crumbs and 1 Tbsp apples.
  7. Bake as directed below and allow to cool slightly before removing from pan.
