Cinnamon Pumpkin Pecan Quick Bread

A classic pumpkin batter bread is enhanced with a crunchy oat and cinnamon streusel.

Oatmeal Streusel Topping

Pumpkin puree, canned

Granulated sugar

Cinnamon, ground

Nutmeg, ground

Pecans, chopped

Oatmeal Streusel Topping
  1. Combine oats, flour, brown sugar, cinnamon and cold butter in mixer bowl fitted with paddle attachment.
  2. Mix on low speed 1-2 minutes or until crumbly; set aside.
Batter
  1. Pour water and pumpkin into mixing bowl; stir to blend.
  2. Add muffin mix, sugar, cinnamon and nutmeg; mix using whisk or rubber spatula until batter is smooth.
  3. Fold in chopped pecans; deposit 1 1/2 lb batter into 6 greased loaf pans.
  4. Sprinkle approx. 3 oz (1/2 cup) Oatmeal Streusel Topping over batter in each pan and bake as directed below.
