This is the ultimate chopped sandwich to feed any late-night craving.

Prep
  1. Spray sheet pan or dough box with pan spray then add frozen dough ball and spray top also; cover and refrigerate overnight or 3-5 hours at room temperature.
  2. Hand stretch dough to approx. 6x4-inch rectangle and place on lightly sprayed parchment-lined half sheet pan.
  3. Fold dough inward from the top edge halfway and press in using your fingertips.
  4. Turn dough 180° and fold over and press down using the palm of your hand to seal the edge; pinch, roll, then tuck in ends of dough.
  5. Apply even pressure from the center outwards to create a uniform 12x2-inch loaf.
  6. Brush with egg wash and coat with sesame seeds; cover and proof until doubled in size, about 1 hour.
  7. Bake as directed below; cool completely.

*Rotate pan baked in convection oven one-half turn (180°) after 5 minutes of baking.
Assembly
  1. Place pastrami, Swiss cheese, coleslaw, pickles, mayonnaise, mustard and Cheetos on a cutting board; roughly chop and fold together.
  2. Slice bread 3/4 of the way through and fill with your chopped ingredients.
  3. Wrap in deli paper or foil, slice in half; serve immediately.
