Prep
  1. Thaw baked croissants, covered, either at room temperature 30-45 minutes or refrigerated overnight.
  2. Split croissant in half and brush cut sides with melted butter; place on preheated 350°F griddle to toast.
  3. Set aside until needed.
Filling
  1. Spread oil on a preheated 350°F griddle; add ground beef patties and sear approx. 1 minute.
  2. Season beef with adobo and add sliced onions; begin chopping the meat with a bench scraper.
  3. Continue chopping until meat and onions are cooked and chopped finely, about 5 minutes.
  4. Layer slices of American cheese to the cooked meat and mix throughout until melted.
Assembly
  1. In mixing bowl, mix ketchup and mayonnaise until incorporated.
  2. Spread approx. 1 Tbsp of ketchup and mayonnaise mixture on both the top and bottom of cut side of croissant.
  3. Place about 2.5 oz (1/3 cup) Filling mixture onto bottom half of the bun.
  4. Add 2 slices of tomatoes and a 0.5 oz of lettuce and top half of bun; wrap and serve immediately.
