Batter
  1. Mix cake batter according to package direction.
  2. Deposit batter, using a #16 scoop, into greased muffin cups.
  3. Place piece of parchment paper on top of muffin pan and cover with a cookie sheet.
  4. Bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 8 minutes of baking.
Tres Leches Mixture
  1. Add evaporated and sweetened condensed milk and cream in a bowl and whisk until combined.
  2. Set aside under refrigeration until ready to assemble cakes.
Assembly
  1. Submerge each cooled cake into Tres Leches Mixture, remove and place into a serving bowl.
  2. Ladle 1 oz of Tres Leches Mixture over top and pipe 0.5 oz (about 2 tsp) whipped topping.
  3. Drizzle on 2 tsp chocolate sauce and refrigerate until ready to serve.
