Chocolate Peanut Butter Whoopie Pies

Scoop devil's food cake batter onto a sheet pan to bake rounded, soft cake-like cookies. Sandwich two cookies with a creamy, dreamy peanut butter filling.

Cream cheese, softened

Batter
  1. Pour 1/2 the total amount of water into mixer bowl. Add total amount of mix and flour.
  2. Mix using paddle attachment on medium speed for 2 minutes.
  3. Add remaining water gradually while mixing on low speed.
  4. Stop mixer, scrape down bowl and paddle.
  5. Scoop batter with #40 scoop onto a greased or parchment-lined full sheet pan in a 4 x 6 pattern.
  6. Bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Filling
  1. Mix cream cheese in mixer with paddle attachment for 2 minutes on medium speed.
  2. Stop mixer, scrape bowl and paddle; mix on medium speed for 2 minutes.
  3. Add vanilla icing, peanut butter and vanilla; mix on low speed for 2 minutes.
  4. Stop mixer, scrape bowl and mix an additional 1 minute.
Assembly
  1. Turn over 1 whoopie so the flat side is up.
  2. Deposit #40 scoop of peanut butter filling on top of each flipped whoopie.
  3. Top with remaining whoopie (flat side towards filling) pressing lightly to make sandwiches.
