Batter
  1. Prepare cake batter according to package directions.
  2. Deposit batter into greased regular-size muffin pans using #20 scoop.
  3. Line top of the muffin pan with parchment paper. Place a half sheet pan on top of muffin pan and bake as directed below.
Peanut Butter Mousse
  1. Place prepared vanilla pudding and peanut butter in medium stainless steel mixing bowl.
  2. Mix until well blended; with rubber spatula, fold in whipped topping until well blended.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
Assembly
  1. Fill pastry bag fitted with small star tip with peanut butter mousse.
  2. Pipe 0.25 oz mousse into center of each cupcake, being careful not to split the cakes.
  3. Top each thimble cake with 0.05 oz remaining mousse.
  4. Heat chocolate icing in microwave; drizzle chocolate evenly over filled cakes.
  5. Sprinkle chopped peanuts over tops of finished cakes.
