Chocolate mini cakes are extra moist with pears, apples and cranberries and fabulous fall spices.

Diced apples, canned, drained

Dried cranberries

Semi-sweet chocolate chips

Finishing

  1. Combine brown sugar, butter and eggs in mixer bowl fitted with paddle attachment; mix on low speed 1 minute.
  2. Stop mixer, scrape bowl and paddle; mix on low speed 1 minute longer.
  3. Add remaining batter ingredients and mix 2 minutes on low speed or until well combined. Do not overmix.
  4. Deposit using #20 scoop into greased muffin pans; bake as directed below and allow to cool.

*Rotate pans baked in convection oven one-half turn (180°) after 9 minutes of baking.
Finishing
  1. Heat chocolate icing in microwave until melted; drizzle over cooled cakes.
  2. Heat caramel sauce in microwave until melted and drizzle on top; serve.
