Chocolate Guinness™ Cupcakes

In a tasty marriage of food and drink, beer and chocolate combine in a distinctive cupcake with cream cheese icing.

Batter
  1. Prepare batter according to box directions, substituting Guinness beer for part of the water.
  2. Deposit #16 scoop of batter into greased or paper-lined muffin pans.
  3. Bake as directed below and allow to cool completely.

*Rotate pans baked in convection oven one-half turn (180°) after 8 minutes of baking.
Ginger Cream Cheese Icing
  1. Add cream cheese to a mixer bowl fitted with paddle attachment; mix on medium speed for 2 minutes.
  2. Add remaining ingredients and mix on low speed for 1 minute.
  3. Mix 1 minute more or until smooth.
Finishing
  1. Pipe 1 oz icing (using straight tip) onto cooled cupcakes.
  2. Lightly dust with cocoa powder and serve.
