Chocolate Cherry Mini Cheesecakes

A chocolate-chocolate chip muffin pressed into a muffin cup becomes a fun, edible cup for creamy cheesecake and cherry topping.

Filling
  1. Mix cream cheese and sugar in mixer bowl using paddle attachment on low speed until light and fluffy, about 2 minutes.
  2. Add eggs and cream; mix on low speed 2 minutes.
  3. Stop mixer, scrape bowl and paddle attachment; mix on low speed until well combined.
Assembly
  1. Spray three jumbo muffin pans generously with cooking spray.
  2. Place 1 slightly thawed muffin puck flat into each muffin cup filling the bottom.
  3. Add #10 scoop of cheesecake filling and #40 scoop of pie filling into center of cheesecake batter.
  4. Bake as directed below, allow to cool completely and keep refrigerated.
