Chocolate Carrot Cake

Cream Cheese Icing
INGREDIENT

Cream cheese, softened

Batter
  1. Add 1.5 lb water, oil, eggs, cake mix, and spices in mixer bowl fitted with whisk attachment.
  2. Mix on high speed 2 minutes. Add remaining water gradually while mixing on low speed and continue mixing for 1 minute.
  3. Stop mixer and scrape bowl. Add carrots, raisins and pecans to batter.
  4. Mix on low speed 2 minutes. Deposit batter into a greased or parchment-lined full sheet pan.

*Rotate pans baked in convection oven one-half turn (180°) after 15 minutes of baking.
Cream Cheese Icing
  1. Place cream cheese into mixer bowl fitted with paddle attachment.
  2. Mix on medium speed 2 minutes. Stop mixer, scrape bowl and paddle.
  3. Add icing and mix on low speed 1 minute. Stop mixer and scrape bowl. Mix an additional 1 minute.
  4. Spread icing evenly over completely cooled cake.

  • Tip: Cakes that have been frozen prior to icing are much easier to work with. Chocolate icing can be used to pipe and form a chocolate carrot. Tint white icing green to pipe and form a leaf.
