Chocolate Angel Food "Yule Log"

Batter
  1. Pour water and cake mix into grease-free mixer bowl; mix using wire whisk attachment on low speed 30 seconds.
  2. Stop mixer, scrape bowl and paddle; add cocoa and mix on low speed 15 seconds.
  3. Stop mixer, scrape bowl and mix on medium speed 30 seconds. DO NOT OVERMIX.
  4. Deposit 1 lb 11 oz batter into each of 2 parchment-lined half sheet pans; bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 7 minutes of baking.
Filling
  1. Add cream cheese and strawberries to mixer bowl fitted with paddle attachment.
  2. Mix on medium speed until smooth; stop mixer, scrape bowl and paddle.
  3. Add powdered sugar (gradually) while mixing on low speed; once all powdered sugar is added turn speed to medium and mix until smooth.
  4. Refrigerate until needed.
Assembly
  1. Sprinkle 1 Tbsp donut sugar over top of each cooled cake; place new sheet of parchment paper on top and invert.
  2. Remove paper liner from bottom of cake.
  3. Spread approx. 1 1/2 cups (12 oz) Filling evenly over top of each cake.
  4. Grasp upper edge of parchment paper and roll cake lengthwise with firm pressure, so the cake sticks to the filling.
  5. Wrap with the parchment paper; place seam side down in refrigerator until thoroughly chilled (or wrap securely in plastic film and freeze for serving later).
  6. Place roll seam side down; ice each with approx. 1.5 lb chocolate icing.
  7. Smooth spatula or cake comb to give the tree bark effect and refrigerate.
  8. Remove paper and use a knife dipped in water for smooth, even slices.
